Deysauno Chalupa

 
Breakfast should be fun and simple.  Who wants to spend a bunch of time in the kitchen when you'd rather be working on getting motivated for the day?  I'm going to take a guess and say this is probably something you've not had before.  I will confess one thing though--they were delicious.  This is one for the books!  I used my own homemade maize tortillas (Caliente y Fresco Maize Tortilla) made in advance of course.  They were just the right size!  If you prefer to use store bought NO PROBLEM!  They'll taste just as awesome.  This served four to six.


4 to 8 Maize Tortillas heated in the oven until brown and crispy

2 tbs olive oil
1/4 cup onion
1/4 cup green pepper
2 garlic cloves
2 cups spicy chorizo
1 cup cooked brown beans


6 eggs
2 tbs milk
salt and pepper to taste
shredded fiesta blend cheese

Chop onion and green pepper.  With minced garlic saute into olive oil in a large frying pan for about 30 seconds.  Chop spicy chorizo into small chunks.  Add to vegetables along with beans.  Stir constantly until chorizo is warm and sizzling.  Remove from heat.

Add eggs with milk and beat until completely smooth.  Whip in salt and pepper pouring into chorizo mixture.  Allow to set for a couple of minutes and rotate spatula along the very edges while tilting skillet allowing liquid to move from the center to the outside.  Continue rotating the outer edge every few seconds until most of the egg has set except for a small portion around the top.  Turn the outer edger toward the center and flip the egg over.  Continue flipping egg until it is complete done and no longer funny.  You should have nice large pieces of egg.

Cut about 3/4 cup of egg and chorizo from skillet and place on top of a maize tortilla that has been browned and crisped in the oven.  Top with a nice portion of shredded cheese and place on a cookie sheet.  Continue topping tortillas until egg is used up.  Return to oven until cheese is melted.

Condiments (optional):

Top with your choice of:  Sour Cream, Jalapeno or salsa
